Homemade Apple fritters.


Did I mention that fall is one of my favorite seasons of the year? The beautiful colors of the leaves, hoodie weather, scarfs, and those pumpkin spice lattes from Panera bread melt my heart! Yes, I know it's summer at the moment but yesterday I couldn't help but have a fall spirit! No, no I didn't decorate the house in fall decor, and I didn't make momma's apple pie. But, I did make apple fritters! Home made too. I decided I wanted to make Leon something special for when he returned home from work. And I have never made him anything like this before. So I thought I'd give it a try. And I'm really glad I did because it turned out delicious! I looked up the pie crust on the internet but the filling I pretty much went with the flow.

Apple Fritters.

Ingredients:  
  • 2 1/2 cups Gold Medal white all-purpose flour
  • 1 cup butter or shortening
  • 1 teaspoon salt
  • 1/3 cup cold water

 Pie Crust:
  1. Chill the shortening/butter and liquid in the freezer. Chilling prevents the flour and butter from forming a creamy consistency, rather than the crumbly consistency you need for pie dough.
  2. Combine flour, salt and chilled butter with a pastry cutter. Blend the mixture until it is crumbled into pieces about the size of small peas. Slowly add chilled water one tablespoon at a time into the mix by stirring with a fork until the dough sticks together into small 1 inch sized clumps.
  3. Remove the dough from the bowl and divide it into two portions. Slightly flatten each portion, wrap them in a plastic wrap and refrigerate the dough for 30 minutes. This will make the dough more elastic and will give the crust a better texture when baked.
  4. Remove one portion of the dough from the refrigerator and let it sit at room temperature for 5 to 10 minutes. Remove the plastic wrap and place it on a dry, clean surface dusted with flour. Slightly flatten with your hands and begin to roll with the rolling pin.
  5. Roll into small circles or really any shape you want. As long as you can close the filling in it without leakage.
 
Fritter filling:

1. Cut up apples into small bite size pieces. I used three Fuji apples.
2. Add cinnamon and sugar.
3. Add just a drop of water to help the mixing process.
4. Mix the apples,cinnamon and sugar until it is evenly mixed.

I didn't measure the cinnamon and sugar I just added as I went along.. I greatly approve taste testing. ;)











 


 
  cooking:

 1. Preheat the oven to 350.
2. Place the filling in the dough leaving room to be ble to close it.
3. Close the dough over the filling.
4. Pinch the sides of the dough to prevent leakage.
5. Decorate the top with cinnamon and sugar.
6. Let cook until golden brown. Mine was done within about five minutes.

Apple Waffles!

Hey beauties, and gentlemen =] Happy weekend! Hope you are having a great one at that!
I sure am! Well, I shall tell you why I am having an enchanted weekend. I made a waffle invention! Yes, while I was craving blueberry waffles, it turned out blueberries, we lacked there of. So, I had to make plan waffles. But as I was mixing the batter this wonderful idea popped in my mind "APPLE WAFFLES"!!! So I crushed up some waffles in a bowl and mixed cinnamon along with it, and I added vanilla to the batter. It was most delightful <3. I have learned that this invention is fantastic with Peanut butter! If you are a PB lover as I proudly am, you should defiantly try this! Unless you don't like apples,cinnamon,vanilla,or waffles that is. But if you do, this recipe is very good! It requires: 1 Apple. A tsp of cinnamon. A Tsp of vanilla. And waffle mix of any kind. (The directions on the box will tell you how to make the actual waffles ;). You can add more or less to the waffles. I usually like this measurement for a serving of five. I really hope you enjoy them! Oh, and if someone already thought of these before me. Please don't rain on my waffle maker. I would love to remain proud of this piece of work! =]




OH! This factoid won't matter to many of you but, for those of you who remember the BBC version of The Lion, The Witch, and The Wardrobe that came out in the 80's ... did you know that the actress Lesley Nicol plays Mrs Beaver?! She also plays Mrs Patmore on Downton Abbey. You are welcome. =]

Frozen reese's peanut butter pie.. Because I loove peanut butter


I saw these and I so want to make them soooon!!!
Frozen Reese’s Peanut Butter Pie

Makes one 9 inch pie or three 4 inch mini pies. Preparation: Lightly butter springform pan if it is not non-stick. If you do not have a springform pan line a cake pan with a piece of lightly buttered foil leaving a one inch over hang around the edges for easy pie removal or alternately use a traditional pie pan.

Ingredients:

24 oreo cookies, crushed
4 tablespoon unsalted butter, melted
2 ½ cups Cool Whip
¾ cup creamy peanut butter
½ cup confectioner sugar
½ cup crushed Reeses Peanut Butter Cups

Instructions:

Oreo Crust:

Place Oreos in a food processor or blender and pulse until cookies are finely crumbed. Alternatively, place Oreos in a plastic bag and crush with a rolling pin. Mix in the melted butter and then firmly press crumbs into pan to create a crust. Bake crust at 350 degrees F for 7-10 minutes.

Reese Peanut Butter Pie Filling:

Place peanut butter and confectioner sugar in a pan over low heat and stir until combined and peanut butter is melted. Set aside for five minutes to cool. Gently fold in peanut butter mixture into Cool Whip until combined. Gently fold in crushed Reese’s pieces into peanut butter Cool Whip mixture.
Pour mixture into Oreo crust and freeze for 3 hours. Garnish with caramel and chocolate drizzle (for added decadence rim with chopped Reese’s pieces).
